Depending on your printer software there are two different methods to set grayscale and black ink only.
Inside printer preferences, you switch to the Features tab. Here you should see grayscale in the bottom left corner. Once grayscale is selected you may switch quality to black ink only. Then press ok.
In printer preferences, you click on the Advanced button. You should see a "Print in grayscale" option set to "Off" switch it to grayscale or black ink only and press ok.
As for with a Mac when you open the print dialog depending on the application there may be a link at the bottom left for the system print dialog. Here you should see a preset option. There is a fast draft black ink only preset. Save that preset and it should become the default option.

Please follow the steps below on how to print using black ink only on your Lexmark S305 printer:
For Windows:
With your document/file open, click File.
Click Print.
Click Printing Preferences/ Properties.
In the Lexmark S300 Series Printing Preferences window, select print using black ink only.
Click OK to save the settings.
Click Ok again to print your file.
For Mac operating system:
With your document/file open, click File.
Click Print.
Expand the arrow pointing down beside printer name if you're not able to see other options for printing. Look for Quality and Media in a drop down box and select print in black and white.
If you wish to set this as your default print setting, please follow steps below:
For Windows:
Go to Control Panel.
Open Printers and Faxes.
Right-click on Lexmark S300 Series print object and click on Properties.
In the Lexmark S300 Series Properties window, go to Advanced tab. Click on Printing Defaults.
Under Ink Use, select Print using black ink only. Click OK.

Why color ink may be used when printing in black and white
Even when printing in black and white, color ink is used for the following reasons:
Automatic cleaning of the print head.
To prevent the print head nozzles from clogging, the print head is automatically cleaned periodically. At that time, a small amount of each color ink is consumed.
Therefore, although printing in black and white is performed, color ink is also consumed.
Color inks may be used to create black.
When printing in grayscale or on photo paper or when duplex printing, although printing appears in black and white, the color black may be created using the three (cyan, magenta, and yellow) color inks. Printers without a pigment black tank / cartridge will print black / grayscale will create a composite black using color ink even on plain paper.
Therefore, although printing in black and white is performed, color ink may be consumed.
In order to keep the heavy black ink from smearing on the page or in the printer, color ink is used when duplex printing to help create black text.

I might suggest taking out the color ink cartridges leaving only black there, but some printers don't take kindly to this. So, you may have to further experiment with magenta, cyan, and yellow to make it at least seem b&w to your best eye's judgment.
I have had the mp600 for 3 years - worked fine on a couple of different pcs. I switched to a mac and encountered 2 issues - scanner stopped working and above problem of no black ink. The newest driver (just google mp600 driver) fixed the scanner issue. The ink issue has a work around - select non plain paper in the media quality tab, instead use any photo paper setting. Finding this area in a mac can be tricky - in the mini print options window you have to click the small chubby arrow and you will then be given a list of options including quality and media. Presto, black ink returns but probably uses more ink and takes longer to print. I have not found a more elegant solution as you have to select this non default paper option every time.
If your using windows OS go to control panel , then printer and fax
icon open it you will see canon printer series listed right click on
it and go to printing preference tab ,check print all documents in
black and white click okay and then try to print....
Here's what just fixed mine... I was having the same issue...
Mac: Go to System Preferences Open Print & Fax Select your printer and open Print Queue Click Utility Select your printer & click Maintenance Select the "Deep Cleaning"
are you using windows or mac? on windows go to printers and faxes under control panel, right click on printer and go to printing preferences and under advance put a check mark on the box that will say grayscale or black ink only.
On mac when you click on file print go to advance tab and print setting, select grayscale or black and white.
