Fryer heats up but does not maintain proper temp. last year replaced hi limit reset & today replaced thermostat

Check the resistance or thermostat.

Sounds like the thermostat is working because it does heat to the right temperature, right? The high limit switch is to shut it down when it gets too hot, so why that helps the unit relight and heat up is strange? Is this gas or electric? Since hitting the reset or high limit button is what is working, I would start there, and replace that... I don't think either part is super expensive, so replacing both wouldn't be too expensive, especially since you have one of the best fryers ever made... Keating is number one in my book, and I know they are expensive to start with, but these two parts shouldn't be much....however I would start with the high limit switch or reset button... Your thermostat may be bad, it does not cut-off on temperature setting that's why temperature continues to rise tripping the hi limit switch.Try replacing the thermostat.

hi limit device possibly tripped off. look for a reset button, usually located at the back of the unit and reset it.

The thermostat is out of calibration and the hi-limit may be as well. I could give you instructions on calibrating the thermostat but the hi-limit is not adjustable at all. The hi-limit cuts off the burners and pilot in the event that the unit gets close to the flash point of the cooking oil. It should not cut out until 400-425 so either the fryer is occaisionally getting a lot hotter than you think or the hi-limit has gotten weak due to the erratic operation of the thermostat. I would recommend that you change both the thermostat and the hi-limit.

The thermostat that SETS the temp is where you should be looking.

It probably is a problem with the thermostat. The reset button is probably a high limit. The high limit is a safety device to turn the fryer off if the oil gets too hot. Normally they will "trip" somewhere between 375 - 450 degrees F for commercial fryers. I would suggest placing a temperature probe in the oil and see what the oil temp is when it trips. If it trips at a temp below 375, it is a bad high limit. If the thermostat is set at 350 and the temp goes over 400 then the thermostat is bad.

Most fryers have what is called a hi limit. When the oil temp reaches a certain Max temp this switch opens the circuit and will not allow the unit to heat. On commercial fryers, the hi limit has a really small red plunger button. Push it in to reset.

The first thing I would check is the hi limit.If that not out then I would try to a temp. gauge that will read above 350 degrees.maybe the thermostats is not right. Reading to low for the temp.

may be your regolator not working properly. to check it u can use another applience or change it.
