My Wells Commercial Waffle Maker smokes after it is turned on for a while. I have cleaned it thoroughly, but it still produces a lot of smoke.

This is normal, and common to heating appliances. The metal needs to be cured as you would a cast iron fry pan. I brushed it with a little oil and turned it on without filling it. Once it heated up fully, I turned it off, let it cool and wiped it out with a paper towel.

I have power going to the fryer, but no sign of life. Im wondering if there is a trip switch somewhere or something. Does it have an oil sensor '?

Is the switch any good? Is power reaching the heating element? Is the element open?

I have put 3 relays in it and it keeps burning them out. I checked all the connections and good and tight. Soon as I put the relay in it last about 2 seconds and throws a spark out the side and quits.

Check the power rating of the fryer against the relay wattage , the relay wattage has to be higher than fryer. If that checks out ok one of the heater elements must be shorted out. with the power off, check for shorts with a ohms meter.

Fryer heats up but does

Hi there.
You may need to calibrate the new thermostat and in doing so, you will need a calibrated thermometer with sensor dipped in oil at about one (1) inch above the fryer thermostat sensing bulb.
Record the cut-off temp (when indicator light goes off) and compare it with the thermostat setting.
The thermostat has a calibration screw ( - ) recessed in the middle of the shaft, you will see the when you pull off the thermostat knob. this calibration screw can be turned by a precision screw driver, turn clockwise to decrease the cut-off temperature ; turn counterclockwise to increase the cut-off temperature.
Just make sure that the unit is preheated or have cycled at least 5 to 8 times and the oil is new before performing the calibration.

Who should I talk to about putting on a secondary high limit control switch on a Wells F88 model deep fryer. Did not pass inspection with our insurance.

Any competent service technician could cobble something like this together, but I'd challenge the insurance company, as this fryer is UL approved. Such a modification would be expensive and void the warranty and NSF and UL approveals.
