My governor assembly is broken and the speed controller does not work

You will need to buy a new governor from Kitchen Aid and possibly the speed control plate at the back. Often when the governor explodes it damages the contacts, they aren't expensive and it's easier than fluffing around trying to straighten it up.

Mixer wont start

Check for broken wire under back cover. Check operation of switch contacts on black speed control plate. Check carbon brushed under black screw caps on the sides. The brushes are keyed, they only work one way.

Mixer leaking oil is it possible some got into my cookie batter

It's pretty impossible to say for sure without having been there to witness it, but it seems possible that it happened. Some mechanical oils and greases are all-natural and wouldn't harm you if you ate a little of them, but that's not something that KitchenAid would ever tell you. As frustrating as it is, I for one would probably choose the safe route and make a new batch.

Removing paddle from 325 artisan

Get some CRC around it, wriggle and grunt for a while and it will release. Clean the shaft and the beater hole. Flour builds up in there and grabs on tight.

Buzzing

Probably the field windings a bit loose. You need to be careful with those, don't tighten the nuts up too tight, just enough so they will not come loose is enough.

Kitchenaid Mixer Planetary becomes sluggish when met with resistance.

The problem will be with the worm gear, if the gear is not stripped then check that the locating pin for the worm gear is not broken or missing. Occasionally the plastic gear can detach from the aluminium boss between plastic and shaft. The worm gear is the 99.9% place where drive can slip. Afterthought, I suppose the planetary pin is not missing or broken??
