I need help finding a repair/wiring manual for a Defy Chest freezer CH 530-HC. The freezer is basically brand new but stopped working -- the compressor just kicks on for a few seconds, then off.

    the photo shows the usual and standard wiring of a freezer, the flow of wirings are the same but it changes only on a color coded type and brand of any freezer in the market, but this will guide you to troubleshoot and find the defective part of the system,in your problem,check the starting capacitor first by using multi-tester. if defective replace it with the same value and try to plug-in again and observe.

An eco defy chest freezer needs compete wiring diagram from thermostat , switch to see why it's tripping the supply after repairs was done.
As it is tripping the supply (RCD or MCB?) since being repaired you should complain bitterly to the repairer.

Chest Freezer Stopped Working 14 years old
The first thing you want to ensure is that power is actually getting into the unit. i suggest that you do that by plugging a night light into the outlet and verify the presence or power. If no power, check your breakers. If power is present note that A chest freezer has only two working parts; the start relay that help the compressor start and a compressor. If you are getting clicking sound, your start relay may be out (inexpensive if you can buy it and install it yourself) or a bad compressor. if you need to call a tech for the repair, you may be able to purchase a new chest freezer that now consume HALF the power and for less than cost of repair.

Wiring diagram of the chest freezer turned into chest fridge. The junction box is not required if all connections are made inside the fridge service compartment. Active (A) connection passes via latching relay terminals
inside the thermostat.

Need -20 degrees Celsius...Will this brand get there?
If all is ideal maybe -10 an occationally -15 and this is F considerable coolder than -20C. ALSO fyi a chest freezer will stay at or below these temps better than an upright and especially a self defrosting model. Because a chest freezer you dont loose all the cold air when you open the door. TYhey are not made in auto matic defrost as far as I know (never have seen one but then I havent been looking for one either. An up right freezer can be manual defrost or automatic. but the cold air falls ouit every time the door is opened.

I would think that the reason the red power wire melted, was because of high amperage, not getting wet. After you replaced it the condenser fan came on, but did the compressor? It may have went out before and that's what caused the bad wire. If you have a volt/ohm meter I can help you check it out.
