Did you try unplugging the television? It may reset if it is unplugged for about an hour or so.
Might try unplugging it when you are going to be away for a while.
I tried those things but didn't help. On my sceptre tv, the volume continues going up or down on its own shortly after changing via the remote. I found that if I press the Mute button 2x (off then on again) after setting the volume it will stay put! The mute button stops it from changing on it's own. Its only a work-around that works for me but maybe it will help others.
Normally, when headphones are plugged in, the TV speaker is automatically muted. To use the headphones, leave the TV volume at a normal level, and the speaker sound should stop when the headphones are plugged in.
Note that this type of device is designed to be left on at all times, so should not be switched off each night. I suspect that it has some slight corruption in the user-settings, so a factory reset may be required.
Does your TV have a "half-mute" setting:
* press MUTE once to reduce the volume to 50%
* press MUTE a second time to reduce the volume to zero
* press MUTE a third time to restore the volume to 100%
Did you try using the volume button *on* the TV rather than your remote control? If so, did it work? If it did work, then the problem is with your remote control and you should get a new one.
