My Kerig machine started shorting the amount of water delivered. Choosing the 8oz gives about 6 oz of liquid; same for 10oz giving 8oz,

tough question - without knowing the make/model it is impossible to give an intelligent response.
try asking the manufacturer what causes those symptoms.

you have posted in the wrong section but my maths is pretty good so hope this helps.It would be much easier and more exact if you made up the whole amount then decant into 8oz containers, you have a quart =2 pts so will need 6pts to make the gallon , which i expect you already new ,if you must do it the other way then use 2oz of the concentrate and add 6oz of water

Here are the measurements for basically every pasta maker:
Full Load
Liquid: 2 eggs and water to total 7 oz.
Flour: 3 1/2 cups flour with a small amount of olive oil (1 tsp?)

Half Load
Liquid: 1 egg and water to total 4 oz.
Flour: 1 3/4 cups flour with a small amount of olive oil (1/2 tsp?)

coffee is too large, decrease larger than the button inside the beans.Turn it to a smaller number.

This worked for me: 1) Turn off machine 2) Remove lower tray. It pulls right out. make sure it is clean. RE-insert. 3) Remove upper tray. It's a little trickier, put it also pulls down and out. Mine was full of coffee grounds. I rinsed it out with tap water. 4) Replace upper tray. 5) Take a used V-cup and take the foil and filter out leaving only the plastic tray. Clean it thoroughly of coffee grounds with water. Replace it in the V-cup insert. 6) Power on the Vue. It should come on pretty quick and say " Ready to Brew" run 6 to 8 oz through with just the blank V-cup. This will clean out any remaining debris. 7) Now put in a new V-cup and brew your coffee!

You must buy a descaling liquid at any big grocery chain. Then add the right amount of cleaner with water in the tank.Set the machine thru a descaling mode or just run a few cycles without coffee thru the machine. Then i would just run clean water thru a few cycles just to clean any residue left from the cleaner. If your using any type of bottled water when you make coffee, I would just use tap water, this will slow down the scaling process.

Food grade grease is what Kitchen Aid put into the gearbox originally. They do supply it as a spare part if you cannot find it as a non Kitchen Aid part.
