Help with removal of Dough Hook on A200.

I bought an old Hobart commercial mixer. Its in great condition. The only problem is there was no instruction book nor parts book with it. The p
roblem is the dough hook Is in the machine & I can"t figure out to Remove
it. HP 1/3, RPM 1725.Could you please give me some insight as to hoe to remove it

    Is there any way to do this without a torch? I was thinking about using a pipe wrench as counterforce.

Force and a torch is your path.

First cut a block of wood that is of a length that is long enough to go from the column to the attachment portion of the planetary. (The block protects the gears from the force.)

Look at the rotation of the hook, you're going to twist it the opposite direction. Above the hook, loop a strand of a wet towel. While keeping the towel damp, not wet, torch the **** out of the hook. I recommend "mapp" gas. Heat it for about 90 seconds to to 2 minutes. The old dough stuck inside will burn off. You should get some black smoke. Use the block of wood, between the attachment portion of the planetary and the column, to resist the twist of the hook. If the wood is properly placed to absorb the load --- dampen towel, torch, block, TWIST. If you use a wrench -- be cautious. Good luck -- Mike

A Hobart A200 stand mixer that I cannot get the dough hook off of?

Try and get some CRC into the top where the hook joins the shaft. You need to be rocking it back & forth to try and get movement. Gradually the movement will increase if your strong men are strong enough and have stamina as well. Once you get it off clean up the shaft with a wire brush. Clean out the hole in the dough hook with the proper size drill, you don't want to make the hole bigger, just cleaner. It will be a build up of flour in there, it packs hard and shrinks the hole, almost unbelievable but true.

Dough hook will not come off

I had the same problem too. There should be maybe 1/4" of loose vertical play of the dough hook (or similar attachment) on the agitator shaft. The hook locks in place rotationally on the shaft until it is pushed up. Before you try to turn the dough hook backwards in an attempt to remove it, push it upwards and hold it up, then rotate.

The bowl holds 20 quarts--are you overloading the mix?This mixer is not made for medium/heavy pizza dough.Depending on the pounds of dough,water and other ingredients will affect the mixer in some way.

amy, depending on how old your mixer is there are 2 types of clutches for 1st gear.these could be your problems--a key is sheared on the shaft--shaft/gear is broken.the bottom part of the mixer where you put on the attachements is called the planetary,does it look like it has moved down?you could tell if the dough hook,wire whip,ect,ect is hitting the bottom of the bowl.if this is the case its just simply tightening the 2 nuts next to the beater shaft.if this is not the case you would have to dissasemble the transmission.let me know.
