possibly excessive gas in the ac system is making it hard to turn the ac compressor---possible ac compressor failure---possible that the idle speed falls too low when the ac is switched on because the idle speed is not being compensated for the extra load of the ac compressor.
Well the computer activates the relay for the fans when needed. You should be able to jumper the relay to check the fan operation. The fans come on when the ac pressure reaches 200psi or so, not as soon as you turn the ac on.
start by cleaning or replacing your in cabin air filter. check to see if your AC condenser fan is turning when the AC is turned on. Make sure the front of the radiator is not clogged with bugs, mud, etc. Check AC compressor relay-make sure the compressor clutch is turning the compressor with engine at idle. lastly check for proper refrigerant charge.
I would check battery connections, battery to motor ground, battery to body ground and motor to body ground strap connections. If you have a bad ground it can cause all kinds of electrical problems.
Sounds like the blower motor resistor. It's located under the dash on the passenger side of the vehicle just behind the blower motor itself. It's a fairly easy job to do. Just replaced one on my own truck. Good luck :)
