A/C making a rattling noise
I'm assuming that your '89 Chevy has the C6 compressor, which utilizes teflon sleeves for the internal pistons. The teflon sleeves wear out, and the small pistons slap inside their chambers, making a sound like marbles in a can. Eventually, the compressor will seize.
They're fairly expensive compressors, so brace yourself!
A/c not cooling
did you check the belt to the compressor before you started the compresor
Carburetor plugs
Not very well. You really need a carb designed for 1978 and prior years.
Where can i find the stock wiring diagram for a 89
I assumed full size truck?

Grinding coming from serpinteen belt
stop that car don't move it your pulley is failing .needing timing belt done .and new pulleys. with new tension-er.i think you have an interface engine .
Truck does not start
check the small wires that plug into the outside of the dist cap. Sometimes we forget to plug those back in or one got plugged into the wrong spot. if that isn't it, let me know
Dash lights
the key position has nothing to do with the lights staying on. That function is controlled by the headlight switch. Make sure the wires going to it are in the correct location. Sounds to me like you have 2 wires crossed. (dimmer working backwards)
89 chevy 3/4 ton. 2wd. 454. AT. truck runs good
check your timing, check that your ignition pick up coil is good. also check your fuel pressure. and check for any vacuum leaks. double check your coolant temp sensor to the ecm it tells the ecm what temp it is and the ecm adjusts the fuel amount accordingly.
