My Saab 900 se turbo 2.0l 4 cylinder Stals out when I push down on the gas pedal. If I release soon enough it cuts back in. any solutions?

Likely has a vacuum hose leak. The hoses all die from the massive heat generated by the turbo engines. Check all the ones on the throttle for cracks.

Stalling/possible overheating in engine, but not registering on the temp gauge

If it is a turbo, check the Turbo BypassValve. Also check all vacuum hoses, after 100 Kmiles replace them all.

I need an engine diagram for a 1995 saab 900 se V6

A SAAB dealer should be able to print one out for you. BTW that engine is practically identical to the V6 used in a caddy Catera, and Saturn Ion. Those diagrams would be the same, so you might want to search that also.
