Sounds as if there is a fault with the motor speed control. A Service Manual covering your model can be downloaded at:

I don't know if it will work for you but move the speed lever from front to back a few times as fast as you can. This will polish the contacts. This is like the old fashioned TV tuners. People used to turn them slowly and then complain when they needed serviced every 6 months. Spinning the tuner knob kept the tuners working flawlessly for years.

Hi. Goto kitchenaid.com and download the parts catalog for your mixer model, these drawings will assist you in the disassembly and reassembly of your mixer.
You'll need to replace the speed control in your mixer. This is a common problem. Be prepared to wait at least a month for your parts to arrive. Unplug your mixer before you open it up.
If you're still under warranty call kitchenaid!

SOURCE: I recently purchased a Hobart
sorry have no idea how to use a mixer ,thats not my domain but the obvious solution here to me is buy a power reducer to put in line so when you want it to go slower you use the power reducer,i have a orbital polisher /sander for the automotive trade and when i polish my cars i use a 110v dropper transformer for a old fashioned sowing machine that was american made and so its 110v well we use 240 here so i use this old transformer to slow my polisher down so i dont burn or burnish the paintwork ,Couldnt you do the same here to slow the mixer down ¿¿?
