your not making sense with you question --state it goes cold in middle of shower --but state it will stay hot or cold forever ----if its the latter continued hot till you shut off water that normal working if the unit shuts down during shower then you have a problem ----unit is set at one temp and runs at that temp and you use shower 1 handle / 2 valve what ever you own to adjust temp their are really only 4 reasons stops making hot water ----2 are usually well water supply --incoming water pressure /flow or to cold ----other are gas valve -or sensor so i would look into your shower handles since almost all have adjustments and anti scold safety

Adjusting Apollo hot water tank

I am not sure what you are asking, But i am going to assume that you want to know about changing the Temp on the heater for inside the house.
If the floor heat was installed properly than it should have a temperture manifold or adjustable thermostat for seperate heating.
You need to find the thermostat or manifold for the garage heat and set it at what ever temp you want the garage to stay at.
Then you can change the A B C knob to a higher setting A is cold B is warm ac is hot. So Increase your temp setting on the heater and this will increase your house water temp for hotter showers and faucet temps. However, they recommend not setting the temp above 120 degrees to prevent severe burns.
If you have a newer home increasing the Hot water heater temp setting may not change the temp at the shower or faucets if you have scald guard faucets installed in the house. This will require adjusting the scald guard valves on each faucet.
I recommend using a candy thermometer or digital thermometer to check the faucet and shower Temp prior to using them and make sure that you inform everyone in the house after you change the temp so that no one gets scalded.

How to adjust the temperature

Great question.
On the back of the unit you should see two small adjustment screws, You will need a flathead screwdriver (generally) and you can turn these dials to increase or decrease the water temp.
This unit may have a plastic panel on the rear that has to be removed first before being able to access these regulators.

Heats up the rapidly decreases within in minutes.

Problem new or old? How long you have unit? Sounds like not enough flow to keep burner on. Tankless need at least .6 gpm to keep hot water flowing or else the burner fires then shuts fires then shuts and you get a sandwich effect...hot cold hot cold. If you have new diverter valve in shower -vs- old two handle type try turning hot water ALL the way ON and see if hot stays hot. If it does stay hot then slowly adjust to cool and see if you maintain a good MIX for proper temp. If it goes cold again try this......LOWER control pad setting to a comfortable 105 degrees (ladies) 100 degrees(men) and turn shower valve all the way to HOT. See if your temp remains consistant now and if it does then problem solved. Tankless mindset...set temp on control pad and stop trying to MIX at shower valve. Thats how these things work. Thats why I install a control pad in each bath and one in the kitchen for adjusting ash temp during dishwasher on time. ditto for wash machine. You should never need to turn on cold water if your unit is set to proper temp at controller. Hope this helps

if you pull the handle off all the way back to the valve body there is a little black stopper around the cartridge body that you can adjust by pulling it out and sliding around the cartridge body this enables people to just turn the handle to one setting and jumpping in to their favorite temperature. in your case it doesn't allow you to have any cold water. so turn it one way see if you get what you want or try the other or some of them you can even just take the darn thing out and not even have to worry about it
