How do I remove the keyless chuck?

Open it up all the way, remove the screw in the center (reverse thread), and then unscrew it off the arbor. for instructions and diagram of a similar model see here.

As long as the charger voltage and the battery voltage match (7 volts) there should be no problem. A fast charger just runs more current thru the battery (per unit time) than a not-so-fast charger. If you notice the battery getting really hot when it's charging (like too hot to touch), stop using it.

Battery has gone Dead

Batteries are definitely still available. I haven't priced one recently, but if you do a google search for 7.2v Makita batteries, you'll find what you're looking for.
On the other hand, for the price of a couple of batteries for that drill, you're well on your way to a new drill and batteries. Nowadays, with lithium ion battery technology and major advances in the drill motors, you'll find a new drill has a lot more torque and holds a longer charge. They also put lights in the front, which are very cool when you're under a sink in the dark trying to screw something in. It depends, I guess, how much you use it, and what for. Do you want to be able to drive 3" screws into framing lumber without a pilot hole? Maybe not.
There are times when I use my 12v impact driver all day and can't imagine trying to make do with my old 9.6 v drill, but I still keep it at home, for just in case. And makita is still tops in my book.

I need to remove the chuck from the drill

In continuation after removing the chuck screw which is left hand thread shift the drill to LOW and use a bent handle allen wrench approx the size of the chuck lock it in the jaws. Turn clutch setting to the drill only position and using a hammer strike the hex key. The chuck has standard threads. To reassemble just reverse this

Electric Makita HP2051 chuck won't close

I don't really know how a chuck works. I use them often on a drill press, cordless drills, etc. My grandfather always said to "check the simple things first." Could something have gotten in the way like saw dust, dirt.....? ? I might suggest trying using compressed air and blow it out? You can buy a can of compressed air at office depot.

I have a brand new makita hammer drill and the chuck is not stuck. It opens and closes freely but the bit still wont come out? Any ideas what may be going on?

Hi. Just to clarify, it is a rotary hammer drill, not an impact drill? In most cases those machines put out 3 joules of energy on the back of the drill bit. If it was a cheap bit, the hammer action "mushrooms" the end of the bit making it difficult to remove. You could try to force it out using a bench vise, but you could damage the chuck.
