Fryer troubleshooting

Fryer's Digital Controller will display "BOIL" if the temperature is it reading does not exceed 212F or 100C for quite some time. Make sure that there is enough level of oil (not water) in the Fry Pot before turning it on.
Why wont the unit light? pilot is working fine
first be sure the valve is in the on position. sounds crazy but I've been there. Next even though the pilot is lit it may not be burning hot enough to make the Thermo pile produce the 750 millivolts the valve needs to operate. If the thermo pile is producing the proper current then the gas valve itself is the culprit. If you are not comfortable with gas and do have the proper testers You should call a pro. The pilot is easy to clean though. turn the gas valve to the off position and remove the pilot. When you remove the gas line to the pilot there is a small oriface inside that looks like a little thimble. Remove it and clean it. the gas flows through a very small hole that clogs very easy. Reassmble it tighten the gas line. Check for leaks with some bubbles and give it a try.

Sounds crazy but check for power at the outlet. If that's good then possibly a bad cord,Power switch or interlock safety switch if it has one. Do you hear a humming sound when you try to use it? If so the motor is frozen up. Hope this helps.
Flames cominhg out of flue
Hi I use to repair every kind of restaurant equipment under the sun..maybe I can help...Is this a new install of the fryer and it never did this before, or did this just start do this..If a new install, the first thing I would check is the gas regulator and see if it is for Nat gas or Lp gas, and find that out..cause it has to match what you have, comming into the building..usuall the gas valve has a sticker on it that says what the water columbs are like for Nat it is like 3-6, and for Lp(propane) it is like 5-12. Ive seen customers buy a used fryer, and install a LP fryer in a Natural gas build, and the valve lets too much gas to the burners, and it will shoot flames out the top..then you would have to buy and convert a gas valve, or use parts to convert it..let me know further..
Flames coming out of flue
I am not familiar with this unit but I would highly recommend you get a service tec, it sounds like the gas pressure is to high and this would be an extreme fire hazard. I would highly recommend not using it until it is repaired.
The front drain is leaking
Hi there.
Check first if there are no foreign objects hangings on the ball causing leak.
If you really need to change the ball valve, cling the jaw of a 14-inch pipe wrench on the neck of the valve connected to the fryer drain and turn it counter clockwise (***do this with no oil on fry tank and make sure that the tank is cold).
Wrap a teflon tape on the thread before installing the new ball valve.

Pitco frialator excessive pilot flame
If you didn't figure it out already you lost the orifice on the pilot light. It's a little metal cup with a tiny hole in it that slips over the end of the gas tube in the pilot assembly. The orifice controls the size of the pilot light. Need to get a new one or find the lost part.
Drain valve is leaking
drain off oil the clear blockage in valve , try cleaning it with a clean cloth or asoft brush
Unit over heats burners stay on after turning off
Either thermostat is faulty or combination gas valve is not shutting off. more than likely it will be a problem with the gas valve which is the big aluminium block located toward the floor of the fryer. the " actuator " on the valve is faulty. replace the valveCheers
Pitco deep fryer flames coming out the fryer
Hi there.
The soot or carbon have probably build up inside the fire tubes, better check and have an authorized service technician clean them.
Make sure that the fryer is receiving the rated gas pressure and correct gas type as stated on the nameplate, this way, carbon or soot formation on fire tubes can be prevented
