Have you or someone converted this fryer to LP and/or back to Natural Gas? This sounds like your orfices are too big and the flames are shooting out, with leaking gas around the orifice itself? I would have the orfices redrilled, so you know they are correct, as this is dangerous... The only other reason you would have fire outside the designated area is because of a leak. When the pots leak, you will sometimes have the oil leaking catch on fire and burn around that leak area... You don't have a leak, do you? My best guess is the orfices are too big...and someone drilled them out that way...too big... Check if your pilot flame sufficiently heats thermopile during operation and make sure also that it is free of soot or any form of dirt, thermopile generates small amount of electricity to energize pilot and main valve of the gas valve for pilot and main burner operation. This electricity passes through hi limit mechanical contacts. Hi limit on fryers act as safety device which will shut down pilot and burner flame when oil temperature reaches 450F.
If your fryer is set at 350F and over shoots up to 450F (which will trip hi limit and shut down pilot and burner flame), the thermostat is not good, but, if hi limit trips on temperature much lower than 450F, hi limit is bad.

You have to remove the pilot assembly in order to clean the pilot orifice, make sure to shut down the unit before doing this.
Unscrew the pilot assembly from the pilot holder, dismantle the pilot assembly from the pilot flexible tube using a vise grip and an adjustable wrench,.Remove the pilot orifice from the pilot head and clean it with damp cloth, you can clean the orifice hole using a smallest pin you can find, make sure that the hole will not be damaged or enlarge once you do this, otherwise, pilot flame quality will become poor and will produce soot.

On gas deep fryers, "HEAT FAILURE" may display if the pilot fails to light or if the pilot flame is too weak as detected by the ignition module.

Trade Chef here. Dirty oil. Wet food. Adding too much at one time. Thermostat problems would burn food. Use a good quality thermometer IN the oil against what the dial says.

Replace the thermocouple.

Thermostat calling for heat.

Are you holding it in long enough? It takes between 20 seconds-1 minute. If it still doesn't stay lit, replace the thermocouple.

You turn the valve knob to "Pilot", push it in, and light it (use a long butane lighter-it's easiest) and keep the button pushed in for 20 seconds-1 minute. If the pilot stays lit, turn the dial to "On".

You have a clogged filter, clogged lines or clogged pump. Did you try to do this with the oil cold? If so, the pump has to work MUCH harder and may not pump. Clean out the oil from the entire system, looking for clogs. Manually filter the oil and pour it back into the system and try it again.
