I bought the microwave brand new 3 months ago as a store display with no return options or warranties. There is some defect that makes it show "0:05" all the time. Sometimes the buttons will effect what is displayed (0:02, 2222, 1, 4), but it will not microwave. We started unplugging it originally because it kept spontaneously turning on when no one was near it and we were worried it was a fired hazard. Is there anything I can do to fix it? Can a local appliance guy fix this for less than the cost of a new one?
You have a shorting membrane keypad. And you are correct - if and when an oven is coming on or doing anything by itself, this is very dangerous and can result in a fire.
So until it is repaired, please leave it unplugged or leave the door open when it's not in use, and of course one should never leave a microwave unattended while cooking, especially if it's doing this!
The details of my answer assume that your model number (from the tag on the microwave, not the manual) is FFMV162LWA (white). If not, please let me know.
On these models, the membrane keypad is not available as a separate part, so you would have to order the control panel frame assembly which comes with a new keypad.
In this case, you simply move your circuit board into the new frame. That is a simple do-it-yourself job.
You can order part number 5304477374 from the Sears Parts Direct Web site for $98.65 (prices subject to change).
There is a video here showing how to remove a typical over the range control panel assembly in under 5 minutes.
Then detach the keypad connector as shown in the photo below, and then remove the control panel screws.
Be careful not to crack the glass display when handling it, or it's a goner.

Reassembly is the reverse of disassembly.

The cycling of your electricity probably didn't hurt it.
Chances are moisture or grease has gotten into the controls. That can ruin the keypad.
The way to prevent that is to be sure you have the microwave's hood vent exhaust fan running whenever you are cooking on the stove top.

should also be a "mini-manual" hidden inside the unit behind the
control panel or hidden on the left side behind the grille, which is

I had the problem where the timer continues to count down but turntable doesn't turn, fan doesn't come on and food doesn't heat. Holding the door up worked for awhile but even that temporary method stopped working.
I bought a door interlock switch the cost $23 from an appliance repair place and replaced it myself. It worked like a charm. To replace the switch, you need to remove 3 screws that hold the plastic grille above the door, which exposes the 1 screw that is holding the control panel. Remove that screw and slide the control panel up to remove it. There are three switches left of the panel. Note the middle swich has a different part number so I'm not sure what that one is called. The bad one on mine happen to be the bottom one. The switch is held on by a "pin" and tab that holds it in place. Push the tab and spin the switch on its "pin" past the tab to remove. Reverse your step to put the new one on. I hope this helps.

Quite
often this is due to grease or food particles stuck somewhere in the
cavity of the oven or stuck on or behind the waveguide cover.
They are often held in place by a plastic rivet.
It can be fragile, and
the metal edges of the oven behind it can be sharp, so be careful!
The cover and the metal
behind it should be cleaned with a mild, non-ammonia cleaner.
If the cavity metal of
the oven is chipped or charred, it will have to be sanded smooth and
clean and dried thoroughly.
Then you can apply some
high-temperature appliance paint, available from places like Wal-Mart,
Lowe's or Builder's Square.
If your waveguide cover
is burned, it will need to be replaced. It provides important
protection for the magnetron.
