There is a small plug on the passenger side of the diff near the top, you open it with a 3/8" ratchet. stick your pinky finger in, if you can touch fluid within a half inch of the hole the fluid is ok.
Have you cleaned off all the dirt from the rear differential? At one point in time I came to the same conclusion about the rear-end of our '93 Safari van, then my dad discovered the plug hidden beneath 1.5" of dirt. I'd check the passenger side of the rear differential, about half-way up the case, in between two 'ribs' of the rear-diff casing.
