Why is white smoking coming from my car dipstick

You either have a clogged PCV system (positive crankcase ventilation) or you have a defective piston or piston ring.

My 5.7litre supercharge ute is spitting the dipstick out when accelerating

There must be a pressure relief valve block or breather valve has to be high oil pressure and it is venting through your dipstick. Lagging out could be blocked injector, worn spark plugs or other fuel starving.

Shooting oil out of dipstick

Your engine breather system is blocked....this means that the only way that the compression caused on ignition that is getting past the piston rings and into the block can escape is via the dipstick tube.
Check breather for kinks and some have filters ensure that these are not blocked

Transmission fluid flows out my dipstick . need help

If fluid is coming out the dipstick, it has to be over full. Usually, it will run out the breather first. If it hasn't been changed in the last 30 or 40,000 miles, change it or have it changed with the proper amount of fluid.

Oil blowing out of the dipstick tube.

On top of the valve cover there is a fresh air breather unit. Make sure the breather unit is not plugged.
Also the fixed orifice PCV should be clear. Find a tool that will go through the orifice and make sure it is clean.
Remove the vacuum hose and check it for cracks or internal damage. With the engine running, make sure you have vacuum through the hose.
Let me know when your finished cleaning the crankcase breather system.
