All I can say is: RELAX. You are tooooooooo winded, so, need some RUSSIAN lads to calm you down. For a while take a sauna. If you can withstand 110C, you are the man. If you can beat me (175C) you are out of this world. Good luck.

Getting moisture under the face of the watch just from wearing. This is not putting it in water at all

This usually happens when the watch is carried from low temperature to the room with higher temperature and it's called condensation. You need to dry out your watch and check if all the gaskets are in tact, flexible and lubricated. Don't leave it for a long, as later those tiny drops of condensate will sit down on gear wheels, causing them to rust and as a consequence will stop the watch working. Any watch repair shop will be able to help within a matter of an hour.

Guess Steel Water resistant is not water resistant!!!

Water resistant does not mean water proof. You should never wear this watch while bathing, swimming or in sauna.
Any watchmaker will be able to remove any condensation and dry out your watch - no matter you are in the U.S.A. or Romania.
Find your nearest watch repair shop and ask for help.

Does anyone have a manual for a datejust rolex

No, there isn;t any downloadable manuals for Rolex watches, but operation of Rolex Datejust is very simple:
1) when you unscrew the crown, it is in winding position,
2) when you pull out the crown to the first click, it is in date setting position,
3) when you pull the crown further out to the second click, it is in time setting position.
To find the daytime or night time on the watch: pull out crown to the second click and advance watch hands forward till you pass the 12 mark on dial. If the date changes as you pass it - it is the night time (midnight). If the date do not change as you pass it - it is the daytime (noon).
After all settings being done, allways screw the crown back down as it protects the watch from water and moisture.
Never use watch in sauna- it's not designed for that.

Larger clasp

Unfortunately, I do not think this is going to be an easy fix. You may want to take it to a local independent watchmaker. Gucci may sell larger clasps but they may be difficult to find even from them directly. I have looked at the watch you have. It it was solid gold a Jeweler could just make it a touch larger.

Looking at the clasps the options i see is

Have the bangle removed and wear it on a leather strap,
Possibly remove the clasp where it says gucci and have the pins laser welded so that the clasp stays in a fixed position similar to a bangle.

Wrong time

Your watch is an automatic watch which means it winds itself as long as you are wearing it. If you don't wear it for several days it will stop working. To solve this situation buy an automatic watch winder to keep your watch in while you are not wearing it and it will keep the correct time.
