Assuming this is actually a Canon IXUS 82 IS (not an 8215 which doesn't exist), I found on page 20 of its user manual that you have to do the following:
Slide the Mode switch to the top setting
Press the Func. Set button
Press the right or left arrow until you see the camera icon that stand for "Auto" (see manual)
Use the up and down arrows to select the "L"
Use the right or left arrow to select the last icon at the right that looks like a clock in front of a picture
Press the DISP button
Use the right or left arrow to de-select [Date/Time]
I suggest that you look at the user manual directly, since some of the above doesn't make a lot of sense without seeing the icons.

Thanks alot for your help. Do you know if there is a way to get rid of the date stamp on photos already taken?
According to the user manual, there is unfortunately no way to remove the timestamps using the camera. I suggest using a photo manipulation program like PaintShop Pro or Adobe Photoshop to "smudge-out" the date from photos.
