Have defrosted my 210 cu.ft. upright freezer v2003rw3, do not have my manual to hand . At what setting on the dial should I put it at to start it up?

Every Refrigerator has its own "personality" There is no common
setting for any one refrigerator. I would start with 3
The real solution is what I have always told my customers
Get a refrigerator thermometer and a freezer thermometer
Refrigerator temp should be about 33-37 degrees.
Freezer should be about 0-10 degrees. below 0 is overkill

You have a plugged drain hose. Defrost unit then check drain hole to see if clear. These have a real problem with that. This company is out of buisness now.

Ice builds up in the freezer

Hi, The defrost heater may not be working properly (timer stuck, heating element burned out, bad defrost thermostat,etc.). The unit should go into defrost mode about every 6-8 hours typically and last about 30 minutes (depending on model of freezer). During defrost cycles the compressor and fan do not run (don't want to keep cooling while trying to defrost). Once defrost is over, the fan and compressor get power again.

its just the machine defrosting itself, let it wee until its empty, then switch back on and let it settle for 24hours before loading up with beer etc......

symptoms you are describing are faulty door seals, try putting a thin piece of paper between door and frame to make sure doors are sealing,also when did you do a full manual defrost??(once a year even with auto defrost)

Our upright freezer door will not seal tight with a vacuum anymore. The freezer fills up with snow from the air drawn in. I have defrosted it and cleaned the seal. What should I do now?

That could be one of two things, one the door is not aligned properly and more important the gasket has failed and needs replacement. The snow as you call it is ice condensed from the atmospheric air that is getting by the gasket. You may want to check the door gasket and sealing surfaces especially in the area of the "snow".
