You need to identify where the leak is coming.
If the leak is on the fry tank, best way to address it is to replace the oil tank.
Check the serial number of the unit with leak on fry tank, verify if it is still under warranty at PITCO web on http://www.middleby.com.

How to check gas pressue on pitco frialator

To check manifold pressure, there is a pressure tap on the manifold on which the burners are mounted. Remove the tap, hook up your manometer and turn the fryer on. Be sure you have no gas leaks once you reinstall the plug. The gas pressure should match what is on the data plate.

for the latest design of pitco frialator, the manufacturer added what they called the self-cleaning burner system.during start-up, ignition is delayed so that dust accumulating in the burner face will be removed once the gas build up on burner chamber ignites, it creates a weak explosion like sound.the next time you hear that during start up, the unit is cleaning its own burner, no need to worry.

Opening fryer door during operation does not correct gas leak problem.
If there is gas leak on your fryer's system, you have to fix the leak or replace parts if necessary.
You can download parts, operation and owner's manual at pitco web on http://www.middleby.com

Our staff cleaned the fryer last night and left the pilot on without filling the oil. . The fryer was with no oil and pilot on overnight. Will it lead to problems or we have to take corrective action.

If the main burners didn't light there shouldn't be a problem. If the main burners came on there could be some damage to the tank but there is no corrective action that can be taken. If damage was done it will usually leak cooking oil when filled. Was the gas valve turned to "pilot" or "on"?
