The door does not close on its own

You might want to check the bottom of the door and see if its dragging and make adjustments if it is. Also there are plastic cams at the door hinge pin area that are supposed to help the door close. They get worn and may need to be replaced. You can lift the door off of the hinge pins and inspect them. hope this helps and good luck.

Walk-in freezer / serial# 983170240P FRZ / ID# 17709 / compartment size 8' x 14' x 7'6"/ Evaporator is freezing up. Not sure if the defrost control is working properly, when I roll the dial it does...

Find a service mechanic you trust and get that door FIXED.
the ping pong ball is to allow the air pressure to equalize and the door to stay shut. Use only an approved door closer. Federal Law states that a walkin freezer door is to have an emergency escape means. That means what it says for a reason. So no one gets shut inside the freezer! After you fix the structure your problems will be a lot less. If you dont fix the structure then it will be a continual problem.
address other problems only after the "load" on the refrigeration equipment is taken care of.

Where is the thermostate(sensor) located that controls the compressor - or is it the same as the sensor located by the door which show the temp on the outside indicator Thanks

The thermostat sensor is located in the top rear of the interior of the unit, if you locate the dial to change temps on the inside of the unit, the sensor is attached to it, you may have to pull your fridge apart to get to it, but it can be done.

Stinky fluid draining into inaccessable drip pan behind compresso

i think where you find bad smell rust colour object in near of comressor its sign of comressor oil and there is leak after the leak that oil has been come out please contcet to your service technician for reweld that leakage and refill refrigarant in your freezer , i hope after that problem will be solve . and freezer will being work batter.

Compressor 12/3 with 20 amp dual pole breaker. 220 VAC

Freezer 12/3 with 20 amp single pole breaker 120 VAC

Mountain of ice in walk-in(floor), around the parts(ceiling)

No choice but to move your food to a secondary unit & defrost the walk-in. If you go chipping around your condenser you risk more damage. Hopefully you have seperate breakers for you walk-in vs other cold storage areas.

someone suggested to me the other day to put weter foods closer to the top the ones with dripin water and more solids down at bottom they said this changes the climate inside to be more economical
im just passing this info cause ive never had or been in contact with a upright freezer

Norlake walk in fridge

Yes if the evaporator drain is blocked or not attached correctly it causes the humidity to remain in the refridgerator. Just opening the door will cause the warm are to enter and cause the symtoms of rain if the water is not taken out the drain properly.Hope this helps JT
