Go to a local jewler they'd be the ones to be able to help you get a new one or repair your old crown it probably just needs to be sodered if just the crown and not the whole crown assembley

The file is a compendium of instructions for a large number of Fossil movements, but it is unclertain which movements the model CH-2331 and CH-2698 watches use. However, movement OS10 (page 15) appears to be the only one that matches the dial layout, button layout and also has a date window as the CH-2331. The watch has a quartz analog mechanism and uses one SR927W 1.55-volt silver oxide button cell. Silver oxide cells have low current output, but very long shelf life, so if the stem is pulled out completely when the watch isn't being worn, the battery could last many years. Scan the instructions to match up the CH-2698 with a movement number. A good guess from examining photos of the face of a CH-2698 watch would be movements OS20 / FS00 or VD53.
Turn the crown either clockwise or counter-clockwise and set the date for the previous day. The direction that moves the date varies on different watch models.
Analog Automatic: Time and Date Setting
Pull crown out to position 2 and rotate clockwise to set time.
Pull crown out to position 3; date will advance automatically. To set to required date, continue to rotate crown between positions 2 and 3.
Push crown back to position 1.
Analog Digital: Time and Calendar Setting
Press and hold pusher A for 2 seconds to enter setting mode. Year will begin flashing.
Press pusher A to select year, month, date, hour, minute, second, and then exit setting mode.
Press pusher B to adjust digit.
Press and hold pusher B to adjust digit automatically.
If no pushers are operated for 30 seconds, setting will be returned to Normal Time Display.

When you pull out crown, there is two positions (clicks), not just one. First click is for day/date quick setting. Second click is for hand setting. Pull the crown out slowly and carefully and you will soon find out both positions.
The dials are part of a Chronograph (stop watch) I assume there is a second, minute, and maybe a date function. Usually the large second hand is part of the stop watch on only moves when you start the stopwatch (top right button) push again to stop and reset back too zero is the bottom button. Usually to set or zero out those dials pull out the crown to the first click (also sets date) then push the top button to set the seconds (big hand) and the bottom button to set the other. sometimes you may need to pull the crown out to the second click (also sets hour and minutes) to set add'l dials.This is generally how you set most chronograph watches the button you push and what moves may be different.
