Look for gluten free recipes that incorporate guar gum and / or xanthan gum (which you can get at health food stores: inexpensive and they go a long way.) Once you get an idea of quantities, you can experiment with adding them to your own favourite gluten-free recipes. These natural ingredients are what many commercial gluten-free bread makers use.

Gluten free recipes are thicker and stickier than wheat and will probably wreck your bread maker. I had a 2500 model and it broke while making a gluten free bread, so yours will likely be the same. I found it best to keep the dough more liquidy than solid to avoid extra strain on the motor and paddles, but it will affect the outcome. There are lots of gluten free recipes on the internet, just do a simple web search.

Sure, gluten free pasta is now available all over the place. You can get it in most supermarkets and there is even a choice of shapes and sizes. Ten years ago you needed to go to specialist shops but now you can buy it pretty much everywhere. It's not as cheap as real pasta but if you also use rice and corn pastas as a supplement, you can have real variety in your diet.
