The best and fastest way is to look at the VIN Plate and it will have a alpha numeric code.
This code tells you the Engine,Transmission, etc....Then contact Chevrolet and they should be able to find the number and tell you exactly what transmission you have in your truck.

the best way to be sure is get your vin number and call the chevy dealer parts department with vin they will tell you exactly what your truck has in it unless some one has modified it,
Check this website and double check your vin number to see if its correct. That way you can determine what you have for your engine sixze. If your engiune number had CE at the very beginning it would be a replacement Crate Engine. Yours is not a crate engine replacement as far as I can tell from the numbers you posted http://www.nastyz28.com/decode.php
iambanshee74 is right if your engine has never been swaped out,because a 350 will fit anywhere a 305 fits,the best way i found is to look at the exhaust manifolds if they drop down off the port at all ports good chance its a 350 but if they go straight acrose and only drop down in the back to the pipe,it will be a 305.
There should be a sticker under the hood telling you what size it is, if not type the vin nunber in on kelly blue book and it might tell the engine size. The size of the engine is recorded by one of the numbers in the vin number, search the web using the vin and I will bet you will find the anwer.
