On the dash top the center section is removed by holding tightly from the sides and slide it toward the windshield until it unlatches. if you mean the one around the radio , it is most of the dash face and has 2 screws at top of instrument cluster and 2 more hiding at the bottom under the the a/c controls way back just above the very front of center counsel.
Like mike said above just added some images. I removed four screw from the bottom where the hazard button is. Removed the cover where the flower goes slides off straight towards you. And the cover for the passengers handle cover slide the top dash cover toward the windshield with two hands towards the windshield. Unscrewed all the star pattern screws off used 2 radio keys to release the stereo then undo the antenna plug and 3 clips ( need to have your code for the stereo. Then pulled the dash forward. All done!

Have your radio code before you pull it out with the right radio tool. This pull would involve removing this parts.
So I'd suggest go to your local public library and look for your car manual. It would be either Chiltons or Clymers manual, it's not as precise a Bentley VW Official factory repair manual. Yes it really involves taking all those parts out just to get to the rotary switch.
