Did fan have a three speed switch to begin with. If not it probably want be able to be done due to motor not being wired for multiple speeds.

Is it 3 wire or 4 wire ? And what color of wires are they ? If you look at old switch it should have numbers or letters to signify wire placement follow diagram from old to new and all should be good .
