What is causing my imperial fryer to burn my fries when the thermostat se at 300 this wasb not happening before

Sounds like your thermostat is not calibrated properly. this is a job for a pro. If you don't do this correctly the grease temps can rise above safe levels and cause the high limit to open.

Hi there, it sounds like your thermopile, for the pilot, is failing during use, when this happens, the small DC voltage it generates is less than the gas valve requires to stay open, and shuts off the pilot, which shuts off the main burners. Another thing that could be happening, is the hi limit is opening prematurely, instead of shutting of the pilot at 450 deg. it now is opening at 325, or 225 or 250. Sometimes the sensing bulb gets broken where it pass's through the oil tank causing this symptom. If you temporarily bypassed the hi limit to test this also, and it still goes off, you need a thermopile. If it stays on, check your temp with a reliable thermometer, and see if it reads fairly close to your setting, if so, then you need a hi limit.

Is this fryer propane?It sounds like the baffles in the tank are clogged.If you remove a burner shine a light in the baffle,if you see alot of soot use a shop vac and clean it out.Let me know.

You have a bad gas valve. It's not reading the signal from the thermostat. The gas valve is stuck open.

When the whole unit shuts down including the pilot light the thermocouple is not working properly. The thermocouple is what tells the gas safety valve that the pilot light is lighted. When the thermocouple fails and does not send the milli-volt (mv) signal to the gas safety valve due a failure the gas safety valve turns off the gas supply. (i.e total shut down)
If you have a handyman around you can have him disconnect the thermocouple from the gas valve control and clean the mating area in the gas valve and on the bitter end of the thermocouple. After cleaning then reconnect the thermocouple. This sometimes corrects the problem. FYI you can get a thermocouple at most any large appliance parts supply. (You will need to the know total length) It would be even better to have the old one in hand during the trip to the parts store.

Pilot not stay on

This problem occurs when the pilot generator is not producing enough millivolts. The pilot can be on, but as soon as you turn on the thermostat the electrical load is increased and the safety magnet shuts off. This is usually caused by a weak pilot flame. If you remove the pilot orifice and clean it, that usually works.

Why imperial fry over heat

Replace the thermostat. Not an uncommon problem. Although there is an adjustment if you remove the thermostat knob and look in the hollow knob shaft where you'll see a place for a precision flat head screwdriver, I have generally found that if the thermostat was working properly at some point, the problem is rarely fixable by adjustment.

It sounds like your gas line either is clogged or your heating tubes are clogged up with oil/dirt/gunk? You can blow these out with a small hand held compressor or if you have a small enough brush, you can use that to clean it. The compressor is the quickest way, but have you cleaned this unit at all? Using a fryer boil out and running the fryer will also help clean out your holes, but again, the compressor works best.

Imperial IFS-40 fryer. Pilot is lit, but buriners won't come on when the temp dial is turned from off to any degree.

Thermostate in IFS-40 fryer doesn't work.

VERY easy. First, remove the 2 small mounting screws holding the thermostat in place. These are located behind the knob so pull the knob off. Follow the capillary line from the thermostat to where it connects to the tank. there are 2 nuts to loosen. First, using a 5/16 wrench, loosen the small nut completely. Then loosen the other nut. Now.. inside the frying area the bulb at the end of the capillary line is mounted. loosen the screws holding it and now it is ready to be pushed down and out the hole in the bottom where you loosened the 2 nuts. Reverse the process to install the thermostat.

Fryer coming on without turning thermostat on

Imperial Model: IFS-40.
The thermostat is either very far out of calibration or has failed, either case it should be relplaced. The Imperial Part # for the thermostat is 1175.
