Was driving today. No problems with the engine light or temp. gauge. But got home and turned off car. Could smell the coolant and see steam rising from under the hood and I could hear the coolant gurgling. The coolant was under the left hand side of the car just below the overflow tank. I let the vehicle cool for a few hours. Went back out to assess the situation. Had some previous work done and found that the cap on the tank had come loose. Would that cause the coolant to bubble out of there?

First thing first, turn off the engine wait for 15 - 20 mints, open the radiator cap and fill it up to the top then start the engine and see if it needs more water adn add as needed, then wait till you ca see the water circulating in the radiator now instead of corculating if it starts boiling out shut the engine replace the thermostat and do the whole thing again.
unless there is water in the engine the gauge will not be able to show the actual temp of the engine, so always malke sure you have water / antifreeze

Make sure the radiator cooling fans are both coming on when the A/C is turned on. This cools down the condenser which is mounted in front of the radiator. Dodge has had issues with the fan controls for years. There is a fan control module which turns the fans on when the a/c is activated or the engine temp reaches a prescribed level. I would replace the thermostat as well if the vehicle has been previously overheated or has high mileage. Good luck

Gas cap has no bearing, lol. Check the wiring under the battery tray. They're notorious for corroding through the wiring & cause a short to the ecm. This results in retarded timing & wierd stuff going on. Write back if you need more. Old car, lots to check.

take it to an auto zone or advanced tell then you want a code check they usely do it for free the use a code machine that hooks to th PIN harness under the dash they can read the code and tell you what the sensiors are saying about the engine and other related systems

Look for a loose connection to the temperature sender unit on the motor.
If all connections OK, you may need a new temp sender unit.
