Temperature is wrong

Many ranges show a beginning temperature that is higher than actual temperature, then the gap closes as it heats up.
Use a accurate oven thermometer to check your temps.
If it is faulty, it will not recalibrate to offset 200 degrees. You will have to replace the ERC.

click the link  Oven temp sensors sense the temperature is the oven cavity and the temp sensor changes resistance, this change in ohm resistance tells the oven control what temperature the oven cavity at and tells the control to shut off the element or turn it back on. The most common temp sensors used today ( *not all ) are approx 1000-1100 ohm resistance at room temperature ( 70F )
Some ohm readings and there temperature:

Oven low heat

Did you try going to the GE website to pull up the Use and Care Manual? It does have a section re: how to adjust the temperature by as much as 35 degrees either way. Although it is not the 100 degrees you mentioned, you could try it and see if it helps...

The main GE website is: http://www.geappliances.com/

At the top of the web page is a SEARCH section. You can click on the blue down arrow in the first box and select Use & Care Manuals, then put your model number in the empty box to the right of that selection box, ie. JT952 is my oven.

If you are having a problem locating your model number/serial number, you can go to the FAQ (frequently asked questions) section to see how to find it.
