Without knowing the bit rate, you would not be able to calculate the symbol rate; and without the symbol rate you would not be able to calculate the bit rate.

Based on the below referenced web sites, you can see that the symbol size for 256 QAM will be 8 bits without considering error detection/correction. The QAM value is determined by taking the number of bits/symol and rasing 2 to that given power.

You don't need the QAM code. QAMs are to do with how digital TV is encoded. There's no information in a QAM that you can use as a consumer.
