Since you ask this question under a Partner 18D, the answer for a Partner system is you go to extension 10 or 11 and, without picking up the handset, press FEATURE 00 and the left intercom button twice. Then for time you dial #103 and the 4 digit military time. Date is #101 and MMDDYY.
Changing the date on a Partner system is done on either ext 10 or 11. At one of those ext's press the feature key and "00" next press the left hand intercom twice the display should say system programming enter in "#101" the display should say system date and the current data in mm,dd,yy format enter the new date month, day then year press feature "00" to logout

From the phone at extension 10 or 11 press FEATURE 00 Left Intercom Left Intercom #103 and enter the 4 digit military time. (if you need it, the date is #101 in mmddyy format).
It is not possible to diable the speaker phone but you can use the HFAI / Mute button to mute or unmute the spk. By default the spker phone is muted. Hope this helps.
