My Nuova Simonelli Mac Digit single group won't maintain steam pressure. The water is hot and the group is properly pressurized according to the gauge and it pulls shots fine, but the steam wand has no pressure. When we first turn it on it builds pressure according to the gauge, but as soon as you open the valve it goes down to zero and no steam comes out.

yes, just behind the tap there is a mixing valve that you can adjust to mix steam and water. this steam is the one making your water hot. open the top cover behind the tap and follow the pipe. there you will see it and adjust.
if you remove the drain tray, there is another plastic cover with screws. remove that too. inside on the right side you will see a black box with a yellow round cap. peel the cap off then you can see a screw. there is also a label that describe the direction of rotation. adjust it there. this is to adjust the pressure of steam. as your machine is increasing steam pressure, it also increases the water temp.
Could be lack of water in the boiler, could be a faulty pressure stat or vent valve. Check the level probe first, then the vent valve and then the pressure stat. You can also use the manual fill to make sure water is getting to the boiler.
Pressure pump is not working or can not produce 9 bar pressure.
Or the coffee is less tha 7 gr.
Or the coffee is grinded too thick.

There is a reset thermostat on the right side of the machine above the element, check to see if it tripped. If it did make sure there is enough water in the machine and when turning it on, open one of the steam valves and turn off the cup warmer. Leave the steam wand open until it hisses or small amounts of steam or air will vent out.
