After filling up (not topping off, just filling until pump goes off) my 2005 Chrysler Pacifica acts as if it wants to cut off and sometimes does during driving. Only when filling up the tank, but not if I add gas without filling.

When you're getting gas at the gas pump if it is shutting off due to back pressure it has nothing to do with your fuel pump. There is a small breather tube that runs from your tank to the filler neck this can sometimes clogged up or fail when this happens if the house collapses the air can not circulate back through the tank and causes this problem
You brakes will act just like old fassion ones you can skid to a stop. You my not stop as quick unless you know how to drive w/o antilock. Have your ABS wheel sensors checked
Yes new gas shocks on the lift gate will fix your problem. I had the same problem on my 2005 Pacifica and when it hit my head- I came up with the solution.
Beside the analog clock display there is a small dot where you can insert a pen. When you push this in gently the clock starts moving very fast. Hold this button in until the time is correct. Make sure you stop before you go by the time you want because it only goes in one direction
