You have a coolant level sensor on the side of the coolant reservoir that sends a signal to the light. Sounds like yours either needs cleaned or changed.
Make sure the cooling system is full this includes reservoir and radiator. If full locate the coolant level sensor. If I remember correctly it will be on the right tank of the radiator. (Passenger side). Disconnect the sensor and check status of gauge. Then jumper the terminals on the harness side and check status. Light should go off or stay on. This tests the circuit. If it goes off when you perform the test and then goes off the circuit is fine in which case you’ll need to replace the sensor.
When cool ckeck coolant levels --also check sensor at reservoir tank --check also that water pump working

check for something stuck in the wheels and as for the coolant light get the car running and up to warm temp and start adding coolant to the reserviour bottle until it is up to hot level because there maybe a bubble in the line but also if might be a bad switch in the reservior bottle itself

You could have a restriction in the egr ports. remove the valve. Plug the holes, start engine. 1 hole will be blowing out exhaust, the other will have large vacuum.

1. drain coolant from radiator
2. unbolt and remove the water neck from the engine block (it's attached to the upper radiator hose) and scrape any leftover gasket material off of the mating surface w/ a razor or gasket scraper, being careful not to actually gouge the metal
3. pull thermostat out of engine block (it's easy to see w/ the water neck off)
4. scrape any gasket material off mating surface on engine side, being even more careful not to gouge the metal here
5. place new t-stat on engine side opening
6. place gasket over the thermostat (you can put a thin bead of RTV sealant on both sides of the gasket if you wish, some people think it's overkill, but i hate doing things twice)
7. replace water neck
8. refill cooling system, use the little brass bleeder screw on top of the motor to bleed out the air until a steady stream of coolant is coming out after the engine is warmed up. close the screw.

i had same problem with my lumina it ended up having a blown head gasket. do a compression check and look for a low cylinder on the outside or twq cylinders next to each other that are low.if they are low it indicates a blown gasket. hope this helps
