Hi. It is a well known problem on VWs you need to let all the air out , your car should have a valve to do this but if you can not find it try leaving the antefrezze cap of and watch for bubles coming out the water ( with the engine runing ,, ) cold

I would suggest an automatic transmission flush before I did anything else.
SOURCE: won't go into gear when running, clutch rattle sound.
I would say it is your clutch (In your case it more than likely the throw out bearing if you hear rattle sound.) with the amount of miles and the year of the vehicle. Clutch plates, just like brake pads, eventually wear out. Consider yourself fortunate that you have gone this far without having to replace it.

at 100 degrees c the aux fan will come on. Make sure that fan is working properly and also that your fan clutch is working properly.If this is happening with the a/c on there is an updated temp switch for aux fan operation on the receiver drier. It should be red in color. The temp is going to rise under different loads but that is a bit extreme in my opinion. Make sure you have a 50 50 mix of water and coolant and that the rad. cap seal is o.k. assuming the rest of your cooling system is in proper working order.

sound like clutch contaminated with oil .you going up a steep hill your rear main seal probably leaking some .causing clutch to slip.
