I find it funny nobody mentioned the cooling fans as a possibility. I am almost positive these have electric cooling fans. Especially if it is equipped with the LT1 350 engine. Do you hear the cooling fans coming on?
What happens if you put the car in nuetral and just raise the RPMs a little. Does the temp drop or does it continue to go up. If it goes down than you have a flow issue at low RPM (which could be a result of low coolant). If it goes up than I would be even more suspicious of the cooling fans not working.

Sometimes when the batery of vehicle goes flat or when u fit a new car batery to the bantams they love to give that problems like gauges not working rpm not working speedo not working and cluster display is dead, u disconect the batery termanils and for example fit positive termanil and arc. Or short til that blue spark occur then u swop around negative on and arc positive,leave the ignition switched on arc til gauges move!! Don't ask me why but that happend to me! A autoelek friend of mine showed me this! NB don't tri this with vehicles with a lot of elektric featers it can cause demage to ecu (engine control unit)

It is on the gearbox side of the engine at the top. There is a black housing with a pipe coming from the radiator. That housing has 3 screws, unscrew the little adapter and you will find the thermostat.

Change the temperature gauge sending unit on the engine. It's probably causing the fan to be on.
