Dan h described what would happen if your timing belt/chain broke.. fortunately the consiquences aren't as dire if your SERPENTINE belt snaps. Most vehicles have the following systems or devices powered by the front engine accessory drive belt (FEAD belt)
AC compressor
Power steering pump
Alternator
Fan (some vehicles do and some don't)
Water pump

All but one of these things can be lived without, at least for a short time. If your belt snaps and your water pump stops your engine will overheat in no time flat., say you're cruising through a rural area and your belt snaps a mile and a half away from the next town, your car will get you there, but you had better turn it off once you get into town. After a belt snaps you've got 2 miles before you absolutely need to shut your car down to avoid damage.

there is no adjustment of the tensioner. It is automatic.

Belt tensioner Automatic tensioners are calibrated to provide the correct amount of tension to the belt for a given accessory drive system. Unless a spring or damping band within the tensioner assembly breaks, or some other machanical part of the tensioner fails, there is no need to check the tensioner for correct tension.

You did well by shutting down quickly.
Why did the water come out when you stopped after the fan belt broke???
Residual engine heat. The engine has fiery explosions going on in the cylinders. Very hot.
Antifreeze flowing through the water jackets of the engine carry this heat away. Fan belt breaks, water pump stops pumping this very hot coolant away, engine temp goes up.
Thus the coolant temp rises enough to boil and push the coolant past the pressurized radiator cap out the overflow onto the ground.
I would recommend a fifty fifty blend of antifreeze and water for coolant. It just cools better.
Not seeing any leaks is very good. Smart thinking on your part saved you money.

If its just a regular drive belt its impossible for this belt to "kick back" and bend a vale. However if this was a timing belt its quite possible to bend valves if it breaks. You problem could be a crank sensor that may have gotten damaged when this belt broke. If the crank sensor is damaged it won't send a reference signal to to computer therefore the vehicle would not have a spark to start. Godd Luck
