Most computers have a bios you access (I see you know how to get there on yours) which allows you to choose options. Being as your bios sees the new card you should be able to either select it as default, or you should be able to click (or unclick) the onboard somewhere. This model looks to be a server, so there are several pages you might have to look through to find it. My server is a HP and it takes forever to makes changes like you are trying to do. Your video card is a 16meg, which should be fine for a server. Most often you don't use a monitor on a server anyhow, they are accessed remotely. But if you still want to change the video card, the following link gives you basic information:

You have a compatibility issue as per your comments and you have no choice but to use the components and operating system that will work with each other. Without drivers you are in deep doo doo and there is no forcing the issue.

You can if your system meets the minimum hardware requirement for Server '08. Check Microsoft website for more detail. You may need to up your memory if it is not above 2GB free and hard drive need at least 1GB for os to install.
