Check condenser coil which is the coil on back with fins, sometimes with metal.mesh filter. If dirty or clogged up clean filter, blow out with air or brush and rinse out, careful not to bend fins. Sounds like issue to me. Unless the dump valve may be leaking by
hoshizakis make ice cubes depending on the amount of water in the sump. if you are starving for water the sump only partially fills in the fill time allowed . then it makes ice until the water is used up and the float switch drops and the cubes are little slices. you can adjust the size of cubes you want by raising or lowering the float assembley in the sump. if its to low the water rises and the float rises and tells the machine you happy with little slices. if you raise it up to max height you can max fill before float satisfies and max ice cubes. But if you are starving for water the time to fill will run out before the sump fills and cubes will be small no matter where you set the floats assembly. water starving can be due to crud in the water line, to small a water line, most hoshizes take a half inch line ,or a clogged water filter. if you suspect a filter take it out . if fill is drastically improved you need a new filter. be aware that starving for water on a hoshizaki will eventually lead to broken evap plates. big time expensive.good luck. i put in a new machine ruined by starving water and the new one made little chips of ice real quick. i finally pulled the filter out and voila! big cubes and great production.
I expereinced the same problem and the only solution I could come up with was to have the gear fabricated. I made a few fro backup. I haven't used any in the two years since i fixed mine. I can sell you a replacement gear or you can send me the gear box and I will install the new gear for you. This same gear box is used in a number of Hoshizaki flakers. Typically symptoms are noisy gear box and jerky auger, or motor spinning but no Auger rotation. Cause is typically scaling/ calcium build up in the evaporator tube. Most likely(50% of the times) Your Ice machine need a real cleaning. not just run clean cycle with ice machine cleaner. every 6 month call HVAC-R guys - machine will last half time longer if u schedule proper maintenance with them. I have seen It all: people try to call "friend", or someone who "knows" how this machines work. Real clean would take up to 3 hours for people who know what they doing. Here is one of my videos, when 3 beeps - long freeze cycle is not common and all others would offer You to get a new Ice Machine. Bill to the owner was 950$, New Machine 3450$ plus labour to install 600$.
I have a Hoshizaki KM-250BAF that is making 3 beeps then pauses and them makes 3 beeps again. If I unplug the ice maker and plug it in it continues to make the 3 beeps. The manual does not mention anything about beeps. Can anyone help?
Hoshizaki machines must have a very clean evaporater other wise the ice will bind causing a slow harvest. This may be from lime scale build up. "Lime A Way" is recommended for this proper cleaning.
