I have a Candy GOU218 when I push the start button it does start the dryer but as soon as I release my finger from the button it stops, It started doing it around a week ago so I had to push and hold

There are push to start circuits used for motors and then there are holding circuits that keep the unit running. This way the dryer stops if the circuit is open due to high temperature or end of the cycle. It seems as if the holding circuit (could be a rotary switch that stays closed while the dryer is running) or a holding circuit relay (stays closed until circuit is broken by the control) has failed.

Wiring diagram

The wiring diagram should show the proper position of the wires. BE SURE you follow it exactly, and keep son away from machine.
