Microwave/Convection Oven has mind of its own: turns to Crisp mode on its own.

I have a KitchenAid built-in high speed microwave/convection oven. All of a sudden, and on its own, the oven's display panel shows the "crisp" function and starts beeping, as if I pressed that button. We hit cancel; the clock comes back on; then it goes to the Crisp mode again, with lots of beeps. Had to flip the breaker to stop it; came back on did the same. For now, we've just hit the breaker to turn it off. Is this a touchpad defect? Can those be replaced, if it is?

Yes this is a touchpad issue. As you have noted the crisp button is stuck and this is the cause of this. You can try removing the keypad and push up the pressed button. If its jammed then replacing it is the only way.

What is convection cookong

A convection microwave is a combination of a standard microwave oven and a convection oven. It allows food cooked in the convection microwave to be cooked quickly, yet come out browned or crisped as in a convection oven. However, most cakes cannot be baked in a microwave oven - only those without an open grain structure, such as brownies. There are microwaves which contain electric browning baking elements. A true convection microwave has a high velocity forced air fan to circulate the hot air uniformly.

My Kitchenaid combo convection/mw works on convect but has a loud humming and no heat on microwave.

A loud humming noise in microwave mode will usually be a shorted high voltage diode or bad magnetron.
