For this particular motherboard, you need a 184-pin DDR SDRAM DDR 266 (PC 2100) memory module. These can be found in sizes ranging from 256MB to 1GB. There are several places that these could be found on the internet. Pricing for a 1GB module seems to be around $44 or $45 USD currently.

The MS-6787 supports a maximum of 2GB of RAM (1GB in each DIMM slot).

Why won't MB recognise new 2 x 1Gb Memory?

The motherboard does not support 1 GB modules; 512 MB is the maximum the motherboard will recognize. Usually, the computer won't even work if the memory isn't supported but in this case it does.

You are just about at the "top of the line" for that motherboard. AGP is now outdated and your board does not support PCI express. The only boost from the video card you can get is a ATI 9800 Pro or equal. Although the 9800 doesn't support shader 3.0. Your memory is also low. Try getting another 1 GB ram. Best bet is a new motherboard with PCIe and 2gb or more ram with at least a video card with 512mb GDDR3 or more.

2x 1GB Memory doesn´t work

Don't try to put your 512MB-RAM, remove it and put only 1GB both with rearest slots to each other.

As per your board specification you can upgrade upto 3GB. but all three memo-stick must be of same size, same type and same frequency.
