I'll start by saying your post indicates it is a Whirlpool oven, however if you could post the complete model number I can speak directly about possible remedies instead of generalizing...
**Though it may not be necessary as I believe your disply may be set to Celsius (centigrade, like Canada and Europe) instead of Fahrenheit since 260C equals 500F thus it tops out at 260...most ovens will not exceed this temp unless in a self clean cycle.**
I suspect if you refer to your operator/owners manual it likely will instruct you how to change it back to display the temperature in Fahrenheit.

This means open/shorted oven temperature sensor and to solve this problem the sensor needs replacement. If you want to do it yourself and wan to be sure before replacing the sensor then you can test it with a voltmeter between 1080-1120ohms....if it reads more then or less then this then it needs replacement however, if the reading is around between 1080-1120ohms then it is the control board that needs replacement.
