My breadmaker is on the dough setting and will not beep to let me know when to add ingredients to the dough

If there is no beep just look at your manuals cycle times and verify how long the 2nd knead takes. Then set another timer such as an alarm clock or oven timer etc. to alert you with a beep that coincides with 5 minutes BEFORE then end of the 2nd knead. Add your fruit, nuts etc. then.

i have had a breadmaker for years and had the same problem. bread needs to go into a preheated oven, not one that heats up as it starts to bake your bread. i only let my breadmaker do the hard work (kneading), when it's done the final punch back, i put the dough in a loaf tin to rise, before putting i into a preheated oven. result a perfect lof

Do you mix up the dough before you put the dough in the machine? or do you just add all the ingredence and let it the machine mix it up?

Hi friend, that is the wonder of a bread machine! You just put the ingredients in (measured carefully) and it does all the work. You don't have to mix anything!

My machine does not beep to add ingredients in the lo carb setting yet the recipe suggested in the maker's book says it should.

If your machine is under warranty you should return it per the instructions. If you want to keep the machine and just adjust to the fact that you don't have the beep you can still add ingredients at the right time. Most manuals show the actual time into the program that the add in beep occurs if you find the page that show the length of all the programs. It will look like a big chart.

Invariably the add-in will occur about halfway during the 2nd knead. Even if you don't hear the beep you can set a kitchen timer to alert you during the 2nd knead. Call me if you need further instruction.

yes it is best to add the yeast last. If you are making your bread right away it is ok to just sprinkle it in without worrying about whether it is dead center or not.

My experience with the machine is that it kneads perfectly, but you have to use ACTIVE DRY YEAST instead of another kind of yeast, and you have to throw the ingredients into the pan in order - do not mix the ingredients at all - just pour them in, and let the machine do the mixing. Except for substituting between BREAD FLOUR and WHOLE WHEAT FLOUR, do not substitute any other ingredients. This one is very picky about the type of ingredients that you use - not for the innovator :-)

Black goo type liquid oozing from under dough hook when done.

Sounds to me like your seal is bad and you need a new bread pan, which includes the seal. Call phone no. in your manual to get the part you need.

Mellerware 84300 Breadmaker missing manual/user guide

My best results

6 heaped tablespoons whole meal
2 heaped tablespoons strong white
2/3 Teaspoons dark brown sugar
A healthy squeeze of tomato puree (adds ascorbic acid and makes the bead last longer)
Pinch of salt
about 3grams dried yeast

select "dough" (9 on mine)

When the program end bake in an oven at gas mark 5

I have never really been satisfied with a square loaf with the paddle hole in it. Also the bread ends up really heavy. I think this is because the bread sweats rather than bakes

The bread-maker is also easier to clean after just making dough, it produces better dough than i can by hand and the machine gets on with it while i can do something else!

Addidng ingredents

Sorry, I don't know too much about breadmakers, but generally speaking, you add ingredients that you want to remain solid later into the mixture. If you add them before the dough is dough-y, then they'll get crushed.
