Ihave a pitco fryer, it over heats, it won't even shut off from the thermostat when it does this. Even if I press the cut off switch. I have to pull out the gas hose from the connection to stop it

HEAT FAILURE - This means the heating system has failed to respond, which can occur because a high temperature limit switch has been tripped and needs resetting. On gas deep fryers, "HEAT FAILURE" may display if the pilot fails to light or if the pilot flame is too weak as detected by the ignition module.
If you manually reset by pressing overtemp thermostat, then check your operating thermostat.. maybe over heating.. if so replace thermostat.. if pilot cuts out completely prematurely without reaching set temp then replace overtemp cut out thermostat as it is faulty. Cheers

The pilot flame will stay lighted even when the thermostat is off, you have to turn the gas valve knob to off position in order to shut the pilot flame. But when burner flame remains on after shutting off the thermostat, the thermostat's mechanical contacts are shorted or remained engaged. If this is tha case, you have to replace the thermostat.
Replace the thermostat, P5047588. If the fryer is not shutting off, both main burner and pilot, when it overheats, also replace the high limit PP10084. The high limit usually shuts the fryer off at about 425-450F. Check your thermometer. A fryer should never get up to 550F.
It shuts down because it is tripping the high limit. Apply a soap solution to the lines going from the gas valve to the thermostat. If bubbles appear there is a leak and needs to be corrected. If no bubbles appear then the thermostat is probably your problem.
