Pilot won't stay lit on a rheem fury water heater. goes out after lit and temp control knob is turned from vacation to warm. also goes out on its own after lit for awhile but before temp control is turned up

Open a nearby window to let in plenty of air and see if problem continues. Problem might be something simple like vent backflow blowing out pilot, or more complicated like bad gas control, or combination of problems listed below. Suspects include: Faulty gas control thermostat. Air in gas line. Low gas pressure. Hot attic air. Insufficient air, or dirty air intake. Dirty combustion parts, and tubes. Thermocouple not sitting in flame. Thermocouple tightened too much. Finger tight + 1/4 turn. No joint compound or teflon tape. Bad venting. Backflow of air down vent pipe caused by tight house and/or other vent fans in house.
If pilot lights and flame is robust and clear blue, and pilot goes out later, then some suspects can be excluded: air in gas line, low gas pressure, thermocouple is overtightened (finger-tight + 1/4 turn), thermocouple not positioned correctly in the flame, dirty pilot tube. At the controls there should be a knob that says " Pilot"... "ON" Turn the knob to pilot and hold it down while lighting the pilot lite. Keep holding it down until it gets warm enough that when you leave it up the pilot stays on. Once the pilot lite stays on on it's own turn it to on.
The thermocouple has failed. It is the temp probe that goes from the pilot lite burner area to the control valve. Go to your local plumbng repair shop and buy one. Most appliance parts stores have them also. Take the old one with you and they will hook you up with an exact replacement. They are not that hard to change. Usually a nut or 2 screws in the temp bulb area at the burner end and a nut that threads into the control valve.
Make sure before you install the new one that the area where it mates to the gas valve is clean. Should be about a 20 min job including clean up with replacement parts in hand.
Air in system. Make sure there is no sources of ignition and loosen the supply line at the heater and purge all air. Mske sure your source valve is open. then turn off yje heater after tightening the line. Let sit in off position for 15 minutes. Then turn therm knob to on slowly and then over to pilot, depress pilot button and hold a ffew seconds. Pilot should light. If so, hold for a few and then release and turn ti on position. Good Luck.
