On my Ixus 70, I can only "embed" the date on pictures when "Postcard Mode" is selected. Press "Func/Set", go down to the bottom icon on the left (sets picture size) then go right to "Postcard" (looks like mountains, will say Postcard when selected) then press Func/set button again. Now press "Menu", scroll down to "Date stamp" and set it to "Date" and press "Menu" button again.
Once embedded, the date cannot be removed later.
